Directions for: Braised Veal Cheeks with Smoked Mushrooms
Ingredients
Braised Veal Cheeks2 piece veal cheeks, cut in quarters
2 Tbsp vegetable oil
1 small onion, chopped
1 small carrot, chopped
1 celery stalk, chopped
5 sprig of thyme
2 bay leafs
5 clove of garlic, peeled and crushed
8 cup beef stock
1 cup red wine
Smoked Mushrooms1 lb(s) assorted mushrooms, sliced
1 8 inch aluminum pie tin
3 Tbsp fine wood chips, hickory or apple wood
2 Tbsp olive oil
2 Tbsp unsalted butter
2 Tbsp shallots, finely chopped
2 Tbsp garlic, chopped
1 Tbsp flat leaf parsley, chopped

Braised Veal Cheeks1. Preheat oven to 350*F. Season the veal cheeks on all sides with salt and pepper. Heat the oil in a heavy large ovenproof pot over medium-high heat. Add the veal cheeks and brown on all sides. Transfer cheeks to a plate. Add the onion, carrot, celery, thyme and garlic to pot. Saut until the vegetables are golden brown. Return the cheeks to the pot. Add the wine, beef broth and bay leafs. Bring to a simmer and cover. Bake in oven until the cheeks are tender about 2 hours. Remove the cheeks from the braising liquid. Strain the liquid into a small saucepot. over medium- high heat, reduce the liquid by half.
2. Season the sauce with salt and pepper. Return the veal cheeks to sauce and keep warm.
Smoked Mushrooms1. to smoke mushrooms, place a large cast iron pan on a stovetop burner over medium high heat. Take a pairing knife and pierce the pie tin with a dozen small holes. when pan is hot, sprinkle the wood chips over the center of pan. Place the pie tin upside down over the chips. Place the sliced mushrooms on top of the pie tin. Cover the entire pan with foil so that no smoke escapes. Smoke the mushrooms for 3-4 minutes and then remove from heat. Let stand covered for 20 minutes.
Sauted Smoked Mushrooms1. Heat olive oil in a large saut pan over high heat. Add shallots and garlic, saut for 1 minute. Add the smoked mushrooms and butter. Cook mushrooms for 5 minutes. Season with salt and pepper and add chopped parsley.
2. to serve dish, place the sauted smoked mushrooms on a plate. Top with veal cheeks and sauce.
