Directions for: Teriyaki Beef Skewers with Ginger Chili Sauce

Ingredients

For the Sauce

cup mayonnaise

3 Tbsp teriyaki sauce

2 Tbsp freshly grated ginger

1 tsp hot Asian-style chili sauce, or to taste

For the Skewers

1-1/2 pounds sirloin steak, cut into 48 small (about 1") cubes

1 cup teriyaki sauce

24 (1") cubes green bell pepper

24 (1") cubes red bell pepper

24 small wooden skewers, soaked in cold water for at least an hour

Directions

For the Sauce

1. Combine the ingredients in a small bowl. Cover and store in the fridge until needed. Can be made up to a day in advance.

For the Skewers

1. Place the beef and teriyaki sauce in a bowl and toss to coat. Cover and marinate in the fridge 4 hours, or overnight, turning occasionally. Line a large baking sheet with parchment paper. Thread 2 pieces of beef, and 1 green and 1 red bell pepper cube, on each skewer. Set the skewers on the baking sheet. (Can be made to this point several hours in advance; cover and store in the fridge until ready to roast.) Preheat the oven to 425* F. Roast the skewers for 10-12 minutes, or until the peppers are crisp/tender and the meat cooked medium to medium-rare. Arrange the skewers on a platter with the dip and serve.
