Red Wine Sauce

Red Wine Sauce
Makes about 1 cup.
Directions for: Red Wine Sauce

Ingredients

2 cup Pinot Noir

fresh thyme

10 black peppercorns

1 shallot, roughly chopped

2 bay leaves

cup dark chicken stock

tsp honey

3 Tbsp unsalted butter

Directions

1. Combine wine, stock, thyme, peppercorns, shallots and bay leaves in a saucepan on medium-high heat.

2. Bring to a boil and reduce by 1/2.

3. Add chicken stock and reduce by another 1/3.

4. Strain and whisk in honey and butter into reduced wine.

5. Season with salt.

6. Keep warm.
