Directions for: Spiced Ground Beef with Grilled Japanese Eggplant and Maple Syrup Sauce
Ingredients
Spiced Ground Beef1 Tbsp vegetable oil
2 lb(s) ground beef
onion, diced
2 red peppers, diced
3 Tbsp garlic powder
1 Tbsp ground cumin
tsp cayenne
juice of 1 lime
1 green chili, sliced
1 cup parsley, chopped
salt and pepper
Maple Syrup Saucecup maple syrup
2 Tbsp red wine vinegar
2 cloves garlic, minced
2 Tbsp black pepper
zest of 2 limes
salt
Grilled Japanese Eggplant4 Japanese Eggplants, cut into quarters length-wise
1 Tbsp vegetable oil
Maple Syrup Sauce
salt and pepper
Directions
Spiced Ground Beef1. Heat oil in cast iron pan, or heavy bottomed pan over medium to high heat.
2. Place beef in pan, breaking up pieces, cook until moisture has evaporated and beef is browned, approximately 10 minutes.
3. Add onion and red peppers, stir.
4. once onion and red peppers have softened, add garlic powder, cumin and cayenne, stir to incorporate.
5. Add chopped parsley and stir to incorporate.
6. Add lime juice and green chili, stir.
7. Remove pan from heat, season with salt and pepper.
Maple Syrup Sauce1. Place all ingredients in a pot, warm over medium heat.
2. Transfer to a bowl.
Grilled Japanese Eggplant1. Heat grill to a medium heat.
2. Drizzle oil over eggplant, season with salt and pepper.
3. Grill Japanese Eggplants on all sides.
4. once Japanese Eggplants has become tender, place in pan and coat with warmed Maple Syrup Sauce, toss.
