This meatloaf is made with ground pork, ground beef, chopped veggies and loaded with herbs for a mouth-watering slow-baked food experience.
Directions for: Ernie's Coffee Shop Meatloaf
Ingredients
2 lb(s) medium ground pork
2 lb(s) medium ground beef
1 stalk celery, finely chopped
1 small carrot, chopped
1 small onion, finely chopped
2 cups dry breadcrumbs
6 extra-large eggs
3 heaping Tbsp sweet relish
3 heaping Tbsp mustard
4 Tbsp granulated garlic
2 Tbsp dried oregano
3 Tbsp ground black pepper
5 Tbsp dried parsley
2 Tbsp kosher salt
2 beef bouillon cubes, crushed
tsp Tabasco sauce
2 cups ketchup

Directions
1. Preheat oven to 375F.
2. in a large bowl, stir together pork, beef, celery, carrots, onion, bread crumbs, eggs, relish, mustard, granulated garlic, oregano, black pepper, parsley, salt, beef bouillon, Tabasco sauce, and 1 cup of the ketchup.
3. Stir well until mixture forms a solid ball.
4. if meatloaf mixture feels dry, gradually add water until mixture feels moist but still holds together.
5. Pack mixture into a buttered loaf pan, piling it into a mound that rises above the sides of the pan.
6. Glaze top and sides of the meatloaf with the remaining ketchup.
7. Place an insert filled with water into a roast pan; drop loaf pan into the water. the water will reach halfway up the loaf pan.
8. Slide roast pan into the oven to bake for 2 hours, or until internal temperature reaches at least 158F.
9. Serve meatloaf with gravy and mashed potatoes.
Tips and Substitutions
Leftover meatloaf will keep for 3 to 4 days if covered and refrigerated.
