Flank Steak Tacos with Pickled Onions, Avocado and Cilantro Lime Crema
Turn last nights dinner into a tasty taco with an easy pickled onion and a rich crema.

Ingredients

4 - 6 slices leftover flank steak (see Cook's Note below)

2 - 3 small corn tortillas

1 avocado

small red onion, thinly sliced and rinsed in very warm water

tsp sugar

cup rice vinegar

cup plain Greek yogurt

cup loosely packed cilantro leaves

1 clove garlic, minced

2 Tbsp lime juice

2 Tbsp olive oil

⅛ tsp salt

Directions

1. in a small bowl, mix the sugar and rice vinegar and add the onions. Allow to sit for at least 1 hour or overnight.

2. in another small bowl, add the yogurt, cilantro, garlic, lime juice, oil and salt. Give it a big stir. Refrigerate until ready to use.

3. Bring tortilla, a few tablespoons of yogurt sauce and onions in separate containers to assemble at the office. Bring the avocado to slice.
