Silver Sage Beef Tartare

Directions for: Silver Sage Beef Tartare

Ingredients

Beef Tartare

4 oz sirloin steak, cleaned and very cold

1 Tbsp capers

Tbsp grainy mustard

1 Tbsp shallots, minced

1 Tbsp chives, finely chopped

1 Tbsp parsley, finely chopped

1 pickled Serrano pepper or red chile

1 egg yolk

Smoked Oyster Sauce

3 oz smoked oysters

2 lemons, juiced

5 anchovies

1 Tbsp capers

cup extra virgin olive oil

Directions

Beef Tartare

1. Using a sharp knife, mince steak, keeping it extremely cold.

2. in a large bowl, combine all ingredients into beef. Season with sea salt and freshly cracked black pepper to taste. Serve with crunchy crostini toasts made from a quality Red Fife wheat bread.

Smoked Oyster Sauce

1. Pure in blender smooth.

2. Fold in 2 cups of aioli (or mayonnaise substitute). Fold in cup water.
