Swedish Meatballs with Pasta and French Cut Beans

Ingredients

Water

2 lb(s) / 900 g extra lean ground beef

1 egg white

cup corn flake crumbs

tsp nutmeg

1 Tbsp dried parsley

tsp ground pepper

lb(s) / 350 g fettuccini pasta

Olive oil (optional)

Dont forget to set a few meatballs aside for sub night.

1 Tbsp grape, cranberry, or apple jelly

2 cup low sodium beef broth

cup 10% cream

cup non-fat sour cream

(non- fat sour cream usually has more gelatin in it so it thickens better)

5 cup French cut green beans

1 tsp Mrs. Dash Table Blend

Directions

1. Bring a large pot of water to a boil for pasta.

2. Place ground beef in a large bowl.

3. Add egg, corn flake crumbs and spices. Combine with your hands or with a fork.

4. Form meatballs, adding them to a large non stick stove top pan at medium heat.

5. You can also use an electric fry pan.

6. Place pasta into boiling water.

7. Reduce heat and set timer following package directions (approx 12 minutes).

8. If you drizzle a tiny amount of olive oil into the water, then pull the softened pasta through it, it helps to prevent the pasta from sticking.
Once meatballs have browned thoroughly

9. Remove meatballs from pan onto a plate.

10. Whisk jelly, beef broth, cream and sour cream into the unclean meatball pan.

11. Return the meatballs to pan. Stir and simmer.

12. Place green beans in a microwave safe pot with lid. Stir in spice.

13. Set timer for 4 minutes. Stir and re-heat 1 additional minute when dinner is ready to serve.
