Directions for: Smoked Meat Shepherd's Pie
Ingredients
Mashed Potatoes1 lb(s) Yukon Gold potatoes, peeled
2 cup butter, melted
2 large white onions, chopped
cup 35% cream
1 tsp kosher salt
1 tsp ground black pepper
Filling & Assembly1 tsp cooking oil
cup carrots, finely chopped
large white onion, chopped
1 cup frozen corn
cup red wine
1 lb(s) Montreal smoked meat (available at most delis)
1 tsp kosher salt
1 tsp ground black pepper
veal gravy (if available, otherwise use beef gravy)
Directions
Mashed Potatoes1. Fill a medium pot with cold water; add potatoes and bring to boil over high heat. Cover and cook for 15-20 minutes, or until potatoes are soft.
2. while potatoes cook, warm 2-3 tablespoons of melted butter in a medium pan over medium heat; add onions to pan. Cook and stir until onions are soft and translucent, about 3 minutes.
3. Strain potatoes and return them to the pot; stir in caramelized onions, remaining butter, 35% cream, kosher salt, and ground black pepper.
4. Mash potatoes until smooth using a hand mixer or masher; cover and keep warm.
Filling & Assembly1. Preheat oven to 350F.
2. in a large pan, warm oil over low heat for 30 seconds. Add carrots to the pan; stir and cook for 4-5 minutes, or until carrots start to soften but are still firm in the middle.
3. Add onions to the pan and cook while stirring for 4-5 minutes, or until soft and translucent. Add corn and red wine, scraping the pan with a wooden spoon to loosen caked-on bits.
4. Add ground smoked meat, kosher salt, and ground black pepper to the pan; stir and warm for 1 minute, then transfer filling to a 12-ounce ungreased casserole dish.
5. Fill a piping bag with mashed potatoes using a spoon or spatula. Pipe a layer of mashed potatoes over the smoked meat filling. if you do not have a piping bag, spread mashed potatoes over the filling and smooth down with a spatula.
6. Cook shepherds pie for 5-10 minutes, or until mashed potatoes are golden brown; remove from oven, cool, and serve with gravy.
