Beef Steak A La Fiorentina

Directions for: Beef Steak A La Fiorentina

Ingredients

1 1/2 to 2 pound porterhouse steak (1 3/4 inch thick)

Salt and pepper, to season

European Greens, to serve

Directions

1. Heat the grill to 400 F.

2. once the grill is very hot drop the steak on it and let it sear briefly, and then reduce the heat to 350 F. as soon as the steak comes off the grill easily flip it and liberally salt the freshly grilled surface.

3. after about 5 to 10 more minutes, when the other side comes free, flip again and salt. Keep on the grill as long as you desire the steak to be done. Don't worry about over salting because the seared surface won't allow the salt to draw out excess moisture. A few more minutes, and flip, then pepper (lightly), flip, then pepper again lightly.

4. if the steak is 1 inch then it will take about 12 to 16 minutes to cook to medium/rare doneness, and 16 to 18 minutes for medium doneness.

5. if the steak is 2 inches then it will take about 20 to 24 minutes for medium/rare doneness, and 24 to 28 minutes for medium doneness.

6. Serve on a bed of European greens.
