Chuck's succulent grilled rib-eye steak, topped with creamy oyster sauce and grilled oyster mushrooms and served with a side of sauted broccoli and oysters, is the perfect meal to wow your guests!
Directions for: Grilled Rib-Eye with Sauteed Broccoli and Oysters
Ingredients
Oyster Sauce3 Tbsp butter (45 ml)
1 shallot, minced
1 clove of garlic, minced
12 oysters shucked, reserve oyster liquid, chopped
2 cup veal stock (500 ml)
1 cup 35% cream (250 ml)
1 Tbsp Worcestershire sauce (15 ml)
A pinch of cayenne
Salt and freshly ground pepper
Sauted Broccoli and Oysters1 heads of broccoli, blanched, cut in pieces
2 Tbsp olive oil (30 ml)
12 oysters, shucked, (reserve oyster liquid)
1 shallot, minced
1 inch of ginger, minced
1 garlic clove, minced
cup honey (60 ml)
cup low sodium soy sauce (60 ml)
Zest and juice of 1 lemon
A pinch of cayenne
Salt and freshly ground pepper
Grilled Rib-Eye Steak4 1 inch thick rib-eye steak
Salt and pepper
Grilled Oyster Mushrooms3 Tbsp olive oil (45 ml)
450 g oyster mushrooms (1 lb)
Salt and pepper
Directions
Oyster Sauce1. in a saucepan on medium heat, melt the butter and saute the shallots and garlic for about 2 minutes until it starts to brown. Add veal stock and cream and continue cooking for 5 minutes. Add oysters and reserved liquid. Add Worcestershire sauce and cayenne. Season with salt and pepper. Reduce it by half for about 10 minutes. Keep warm.
Sauted Broccoli and Oysters1. in a wok, heat oil and saute the shallots with garlic and ginger. Add oysters and reserved liquid. Add the broccoli, honey, soy sauce and continue to saute for 2 minutes. Add cayenne pepper, lemon, zest and juice and salt and pepper. Keep warm.
Grilled Rib-Eye Steak1. Remove meat from refrigerator 30 minutes prior to preparation. Rub with salt and freshly cracked pepper
2. in a cast iron pan, grill the meat on one side in oil for about 5 minutes. Turn and continue cooking for 2-3 minutes on the other side. Transfer rib-eye steaks to a plate and cover loosely with aluminum foil and set aside.
Grilled Oyster Mushrooms1. in a pan, heat oil and saute the mushrooms. Season with salt and pepper. Keep warm.
2. Plate rib-eye steaks with creamy oyster sauce and grilled oyster mushrooms. as a side, serve with the sauted broccoli and oysters.
