Roasted Poblano Pepper Sliders

Directions for: Roasted Poblano Pepper Sliders

Ingredients

Beef Patties

1 lb(s) 85% lean ground beef

1 tsp vegetable oil

2 poblano peppers, deseeded, peeled and chopped in small dice

large white onion, chopped in small dice

1 Tbsp Worcestershire sauce

1 Tbsp + 1 pinch kosher salt

Tbsp ground black pepper

Tbsp smoked ancho chili powder

Corn & Chorizo Relish

1 cups fresh corn, cut off the cob

cup Spanish chorizo

1 Tbsp sherry wine vinegar

Griddled Queso Fresco

8 oz Queso Fresco, sliced in 1-inch-thick slices

tsp vegetable oil

Roasted Garlic Sauce

cup garlic

tsp vegetable oil

1 cup sour cream

cup mayonnaise

1 Tbsp vinegar

salt and black pepper, to taste

Buns

8 French rolls

tsp vegetable oil

Directions

Beef Patties

1. Roast the poblano peppers and quartered onion at 350F for 30-35 minutes with the vegetable oil and the pinch of salt.

2. once the peppers and onion are roasted, deseed and peel the peppers, then chop the peppers and onion in a small dice. Fold them in with the rest of the ingredients in a medium-sized bowl. Divide into 3-oz portions and form these portions into 8 patties.

3. Heat griddle to medium or medium-high and cook to medium doneness, about 5 minutes on each side.

Corn & Chorizo Relish

1. Chop the chorizo to a small dice, then saut until lightly browned. Add fresh corn, and cook with chorizo for 5 minutes. Add vinegar, then cook for another minute. Set aside.

Griddled Queso Fresco

1. Slice Queso Fresco into 8 slices. Heat griddle to medium-low. Grease the griddle with the oil, then cook cheese until golden brown, about 2 minutes on each side.

Roasted Garlic Sauce

1. Roast the garlic with the oil at 350F for 45 minutes or until soft. Blend the garlic with the remaining ingredients.

Buns

1. Heat griddle to medium-low. Cut rolls in half. Grease the griddle with the oil, then place the buns on the griddle for 2 minutes or until golden brown, cut side down.

Assembly

1. Place a burger on the bun then spoon some of the Corn and Chorizo Relish on top. Place a piece of griddled cheese over the relish, and top with 1 oz of sauce.
