Meatloaf Sandwich

Ingredients

Classic Meatloaf

1 lb(s) pork butt (or ground pork)

1 lb(s) beef chuck (or ground beef)

1 egg

1 cup milk

1 cup dry unseasoned breadcrumbs

1 cup onion, finely diced

cup carrot, finely diced

green pepper, finely diced

cup celery, finely diced

1 tsp smoked paprika

1 tsp cayenne

1 Tbsp kosher salt

1 Tbsp fresh pepper, finely ground

Meatloaf Sandwiches

1 portion Classic Meatloaf (above)

1 tomato, sliced

1 onion, sliced

clove garlic, minced

pinch thyme

pinch thyme

1 handful arugula

1 dash olive oil

pinch salt and pepper

6 - 8 potato rolls, toasted with butter

mayonnaise, for spreading

Directions

Classic Meatloaf

1. Trim beef of all its silver skin and most of the fat (leave about 20% fat). Cut into strips and set aside on sheet pan.

2. Trim top fat cap of pork. Cut into strips and place on sheet pan along with prepared beef. Place in freezer to chill for 25 minutes but do not freeze.

3. Using a grinder, grind chilled meat, taking care not to place too much pressure on the meat. the meat mixture should be light and fluffy. Set bowl aside.

4. if using pre-ground meats, remove from packages and loosen meats with a fork.

5. Preheat oven to 375F.

6. in a separate bowl, combine egg, milk, and breadcrumbs, creating a wet paste. Set aside.

7. Add spices, then vegetables, and then wet mixture to ground meat. only after all ingredients are added, gently fold to combine. do not over mix; meat should remain cold.

8. Line a loaf pan with 2 layers of plastic wrap, leaving plenty of overhang. Pack mixture into pan. Fold plastic wrap tightly around meat, ensuring there are no holes for steam to escape. Cover pan with aluminum foil and bake for 1 hour 30 minutes. Slice into 6 to 7 ounce portions (about 1-inch thick).

Meatloaf Sandwiches

1. Sear meatloaf slices in an oiled pan on medium-high heat until slightly browned. Flip meatloaf slices and repeat. Cover pan and continue to cook for 2 minutes. this allows for meat to steam. Remove meatloaf slices from pan.

2. Place tomatoes and onions in same pan. Sprinkle garlic and thyme on vegetables and cook until softened.

3. Toss arugula, olive oil, salt, and pepper in a bowl.

4. Spread mayonnaise onto buttered and toasted potato roll. Place meatloaf, tomato, onion, and seasoned arugula in roll. Serve.
