Directions for: Spanish Meat Patties with Rice and Vegetable Skillet
Ingredients
Spanish Meat Patties1 or 2 packages of mushrooms (165g packages)
1 or 2 packages garden vegetable flavored rice
1 lb(s) (675g) extra lean ground beef
cup cornflake crumbs
cup chunky salsa
2 tsp each of Mrs. Dash Italian Seasoning and prepared garlic
Fresh ground pepper to taste
Aluminum foil
Cooking spray
Vegetable Skillet1 onion
2 tomatoes
15 mushrooms
1 tsp of salt
1 tsp rosemary
1 tsp dried parsley
1 tsp virgin olive oil
Sauce1 cup hot ketchup
cup beef broth
tsp Mrs. Dash Italian Seasoning
Fresh ground pepper to taste
Directions
Spanish Meat Patties1. Combine rice and water in a large microwave-safe pot or casserole with lid.
2. Microwave according to package directions.
3. Combine the following in a large bowl in this order: ground beef, cornflake crumbs, salsa, onion flakes, spices and garlic.
4. Form into 4 to 6 large patties and grill on BBQ. Close lid.
Vegetable Skillet1. Spray large piece of foil with cooking spray, shiny side in.
2. Coarsely chop onion and tomatoes and sliced mushrooms.
3. Heap in centre of foil.
4. Sprinkle with spice, drizzle with oil and wrap.
5. Place on BBQ beside meat approximately 5 to 7 minutes turning once. Close lid.
6. Place cooked meat in a serving dish with lid until veggies are cooked.
7. Warm patties in microwave for 2 minutes
8. Serve patties on rice with veggies on the side. (garnish with black olives if desired)
9. Pour sauce on top of each patty.
Sauce1. in a small stove-top pot combine ketchup, broth and spices.
2. Heat and stir until well blended. Remove from heat.
