Directions for: Steak with Peppercorn Brandy Sauce, Corn on the Cob and Mixed Greens
Ingredients
3 tsp prepared garlic (in a jar )
2 Tbsp mixed peppercorns
2 Tbsp olive oil
5 boneless beef sirloin steaks (1 kg/2.2 lbs)
4-6 fresh corn on the cob (frozen if not in season)
Aluminum foil
2 Tbsp apricot brandy
cup 10% cream
cup 1% milk
2 tsp flour
1 bag pre-washed mixed greens (12 oz/350 g)
1 carrot
Favorite salad dressing
Directions
1. Take out equipment.
2. Mix garlic and peppercorns in a bowl. Press mixture onto steaks.
3. Heat oil in an uncovered large stove top fry-pan on medium heat.
4. Place steaks in pan, turning once, and cook slightly less than desired tenderness.
5. Remember steaks will continue to cook in foil.
6. Meanwhile
7. Set timer for 5 minutes.
8. when timer rings remove from heat.
9. Remove steaks from pan and wrap in foil to keep warm.
10. in same pan, reduce heat to simmer and discard 1/2 of peppercorns (or all if very burnt).
11. Add brandy.
12. Whisk cream, milk, and flour into same pan.
13. Simmer until mixture thickens slightly.
14. Rinse mixed greens under cold water in a salad spinner. Spin dry. Place in salad bowl.
15. Grate carrot over salad.
16. Drain steak juice from foil into pan and whisk into sauce. Serve sauce over steaks and enjoy!
