Ease of Preparation: Easy.This cheesy meat rice and veggie combo will have you coming back for more.
Directions for: Veal Parmesan with Chicken Flavoured Rice and Broccoli
Ingredients
1 cup Mixed Rice w/ Dehydrated Veggies, (try Canoe brand)
Large Piece of Waxed Paper
cup Flour
2 Tbsp Grated Parmesan Cheese
tsp Mrs.Dash Italian Seasoning
tsp Pinch of Fresh Pepper (1/8 Tsp)
tsp Butter
tsp Olive Oil
12 slices Veal Scaloppini (1 lb / 450 gms)
cup Milk (try soy milk)
1 cup Pasta Sauce, (try Hunts Red Pepper and Chili) (Freeze the rest for next time)
1 cup Grated Part-Skim Mozzarella
1 tsp Canola Oil
1 stalks of Celery
Prepared Cooked Rice
1 Tbsp Chicken Bouillon Powder
1 Tbsp parsley
Pinch of Pepper
tsp Curry Powder
5 cup Broccoli Florets (1 lb / 450 gms)
tsp Mrs. Dash Table Blend
Butter (Optional)
Directions
1. Take out equipment and ingredients.
2. the night before: Prepare mixed rice according to package directions. Cool then refrigerate.
3. Set oven to 375 degrees F. Pour flour, Parmesan cheese, and spice onto a large piece of waxed paper in that order. Combine with a fork until well mixed.
4. Melt butter and oil in a 9x13 oven proof pan in hot oven (watch carefully). Remove when butter is melted and stir to combine.
5. Dip veal into milk and then place on top of flour mixture. Lift up the sides of waxed paper so that the flour coats the piece of veal, then place on melted butter. Repeat with all the veal. you may need to scrunch them together. Place in hot oven.
6. Set timer for 15 minutes. when timer rings for veal, reduce heat to 350 degrees F.
7. Pour sauce all over veal and top with mozzarella cheese. Return to oven until dinner is ready.
8. Meanwhile: Heat oil in a large fry pan at medium. Finely chop celery adding to pan as you chop.
9. when celery is tender add cooked rice, bouillon powder, parsley and spices.
10. Mix well and heat through, stirring occasionally.
11. Rinse broccoli in colander. Place in a microwave-safe pot or casserole dish with lid. Cover and microwave at high for 4 minutes. when timer rings for broccoli, add spice and butter if you must. Talk about an amazing dinner!!!
