All Dressed G Style Pizza

Ingredients

Tomato sauce

3 cup San Marzano tomatoes

cup extra virgin olive oil

3 garlic cloves, minced

5 basil leaves, torn

cup fresh parsley, minced

1 tsp dried oregano

tsp hot chili flakes

2 Tbsp Parmigianno, finely grated

Freshly cracked pepper

Dough

10 oz warm water

1 tsp yeast

3 Tbsp extra virgin olive oil

1 tsp raw sugar

1 tsp sea salt

1 cup all-purpose flour

1 cup whole wheat flour

1 Tbsp leaf lard

Toppings

lb(s) Salami di Genoa, sliced

cup Kalamata olives, roughly chopped

lb(s) Mozzarella di Bufala, sliced 1/4 inch thick

cup Pecorino, grated

1 cup baby spinach, julienned

Directions

Tomato sauce

1. in a large bowl add tomatoes, olive oil, garlic, fresh basil, parsley, dried basil, dried oregano, chili flakes, Parmigianno, lots of cracked pepper and crush with hands to mix. Cover and let sit in the fridge for 3 hours to overnight.

Dough

1. in a medium bowl, mix yeast with warm water and let sit for 5 minutes. Add 2 tablespoons of olive oil, sugar, salt, and whisk. Set aside. in a large bowl mix all-purpose and whole-wheat flour. Make a hole in the middle and pour in yeast mixture. Slowly hand-mix flour until all liquid is absorbed. if too wet, add more flour, 1/4 cup at a time. Sprinkle clean work station with flour and knead dough until smooth and elastic. Coat large ceramic bowl with 1 tablespoon of olive oil. Place dough in ceramic bowl, and flip over to coat in oil. Cover top of dough with plastic wrap and cover bowl with dishtowel. Let rise for two hours, until dough has doubled in size. Punch down dough and let rise for another hour.

Toppings All Dressed G Style Pizza

1. Preheat oven to 475F

2. Grease pizza pan with leaf lard. Mold dough into shape of pan. Spoon on 2 tablespoons of sauce onto dough. Place pizza on bottom rack for 5 minutes, to pre-crisp crust. Take out of the oven and add another 1/4 cup tomato sauce. Add Mozzarella, Pecorino, salami, and olives.

3. Place on middle rack and cook for 10-12 minutes, until cheese is bubbly. Remove from oven. Immediately remove from pan and sprinkle with spinach. Cut into rectangles.
