Easy Sirloin Roast with Roaste

2 lb(s) (1 kg) beef sirloin tip roast

cup (60 mL) prepared pesto

1 salt and pepper, to taste

1 large red onion, cut into 8 wedges

2 cup (500 mL) cherry tomatoes

1 lb(s) (454 g) asparagus, trimmed

1 bag (750 g) McCain Superfries Homestyle Red Skin Wedges

Easy Sirloin Roast with Roaste

1. Preheat oven to 350F (180C).

2. to ensure proper browning, pat roast dry with paper towel. Rub roast on all sides with pesto. Season with salt and pepper.

3. in a small roasting pan, place roast and onions; cook for 50 to 60 minutes or until an instant-read thermometer inserted into the thickest part of the roast reaches 145F (63C) for medium-rare. Add cherry tomatoes and asparagus to the roasting pan in the last 15 minutes of cooking. Remove roast from oven, tent with foil and let rest for 15 minutes.

4. Meanwhile, cook McCain Superfries Homestyle Red Skin Wedges according to package directions.

5. Slice roast across the grain in -inch (.5 cm) thick slices and serve with veggies and McCain Superfries Homestyle Red Skin Wedges.

Tips

1. Kick it up a notch and toss your McCain Superfries Homestyle Red Skin Wedges with 1 tsp chili flakes or your favourite steak seasoning before cooking.

2. in order to get a proper sear (to seal in the juices) on beef, it is important to always lightly blot (not press or squeeze) the beef with a paper towel to remove surface blood and moisture. Wet meat will never sear but rather steam or boil in the moisture.
