Ginger-Glazed Rump Roast

Ginger-Glazed Rump Roast
Mint and honey adds a little sweetness to the strong ginger flavours of this pork dish.

Ingredients

1 2 lb(s) rump oven roast

4 cloves garlic, minced

2 Tbsp minced ginger, root

1 Tbsp ground ginger

2 Tbsp olive oil

2 tsp dried mint

1 tsp pepper

tsp salt

1 Tbsp liquid honey

1 Tbsp cider vinegar

Directions

1. Preheat oven to 500 degrees F (260 degrees C).

2. Place roast on rack in small roasting pan.

3. Combine garlic, ginger, oil, mint, pepper and salt; spread all over roast.

4. Pour 1 cup (250 mL) water into pan.

5. Roast for 30 minutes.

6. Reduce heat to 275 degrees F (140 degrees C); roast for 30 minutes.

7. Stir honey with vinegar; brush one-third over roast.

8. Roast, basting twice with remaining honey mixture, for 40 minutes or until thermometer registers 140 degrees F (60 degrees C) for rare, or until desired doneness.

9. Transfer to cutting board; tent with foil and let stand for 10 minutes before slicing thinly across the grain.
