The Big Shot Cheesesteak

Directions for: the Big Shot Cheesesteak

Ingredients

Truffle Mayonnaise

1 cup mayonnaise

1 shallot, finely chopped

1 Tbsp flat leaf parsley leaves, roughly chopped

lemon (juice only)

1 Tbsp quality truffle emlusion or paste

1 Tbsp quality white truffle oil

1 pinch kosher salt and freshly cracked black pepper to taste

The Big Shot Cheesesteak

4 potato dough baguettes (8 inches in length)

1 Tbsp grape seed oil

8 oz sweet yellow onions, julienned

16 oz mixed mushrooms, sliced (use an assortment of best quality available, wild varieties if possible)

24 oz waygu or high grade beef ribeye, shaved very thinly (1/8-inch)

16 slices Fontina cheese

1 Tbsp parsley leaves, cut into long thin strips or chiffonade

1 pinch kosher salt and freshly cracked black pepper to taste

4 oz Truffle Mayonnaise (see recipe)

4 oz crispy fried onions or shallots

Directions

Truffle Mayonnaise

1. Combine all ingredients in a stainless steel bowl.

2. Mix with a whisk until fully incorporated.

3. Check seasoning by tasting. Add salt & pepper if required.

4. Store in refrigerator in a squeeze bottle for use.

The Big Shot Cheesesteak

1. Bake the potato baguette in oven at 350 degrees Fahrenheit until crisp and lightly browned or about 7 to 10 minutes.

2. Preheat griddle to 375 degrees Fahrenheit (or large iron skillet over medium high heat).

3. Lightly brown sweet yellow onions and saut mushrooms in 1 teaspoon of oil & season with salt, pepper and parsley.

4. Add remaining oil to griddle or pan and cook beef to medium.

5. Mix cooked beef, onions, mushrooms, parsley and form into 4 equal size rectangular shapes on the griddle or in cast iron pan.

6. Shingle 4 slices of Fontina cheese over each of the beef vegetable mixture rectangles and gently melt the cheese.

7. Cut freshly baked potato buns lengthwise leaving a hinge.

8. Using an offset metal spatula, lift the ingredients from the griddle or pan and place on each of the potato buns.

9. Garnish each sandwich with a 1 ounce zigzag of truffle mayo and 1 ounce of the crispy fried onions.

10. for the ultimate Big Shot Cheesesteak experience, serve in a wax paper lined basket.
