Teriyaki Sirloin Beef and Bean Salad
Succulent sirloin beef and a filling bean salad topped off with miso dressing, you're going to love this!

Ingredients

Teriyaki Beef

cup good quality soy sauce

cup rice vinegar

2 Tbsp dark brown sugar

1 Tbsp grated fresh ginger

2 clove garlic, minced

1 pinch chili flakes (optional)

1 lb(s) top sirloin steak

Miso Dressing

1 Tbsp light miso paste

1 Tbsp honey

1 Tbsp rice vinegar

1 Tbsp soy sauce

1 Tbsp water

1 tsp grated fresh ginger

5 Tbsp vegetable oil

1 dash sesame oil

Salad

cup dried adzuki beans

3 cup finely shredded Napa cabbage

lb(s) fresh green beans, blanched, cut into 1-inch pieces and chilled

lb(s) button mushrooms, sliced

2 cup diced cucumber, cut into -inch pieces

1 cup bean sprouts

4 Tbsp fresh coriander leaves

2 Tbsp mint leaves

1 Tbsp black or white (or mixed) sesame seeds, lightly toasted

Directions

Teriyaki Beef

1. for beef mix soy, vinegar, sugar, ginger, garlic and chili flakes (if using) together in a baking dish. Place steak into marinade, turning once, wrap in plastic and chill for a minimum of 2 to a maximum of 6 hours, turning occasionally.

2. Remove steak from marinade to a plate and pour marinade into a pot and simmer for 5 minutes. Preheat a grill on medium high and grill steak for about 6 minutes, rotating 90 degrees after 3 minutes. Turn steak over and cook for another 6 minutes, rotating once, for rare to medium rare, and baste steak with sauce. Let steak rest for 8 minutes before slicing thinly.

3. Alternatively, steak can be marinated and grilled ahead of time and served chilled over salad.

4. Note: Miso paste and adzuki beans can be purchased at bulk stores, health food stores or Asian food stores.

Miso Dressing

1. for miso dressing. Whisk all ingredients together and chill until ready to serve.

Salad

1. for salad, simmer adzuki beans in unsalted water until tender, about 25 minutes, then drain and rinse to cool. Combine all salad ingredients in a large bowl and toss with miso dressing. Arrange salad on a large platter (or on individual plates) and arrange slices of sirloin steak overtop.
