With seven stages to completion, this burger is a wonder of the comfort food world, including a homemade steak spice, beef short ribs, tomato jam, garlic aioli and caramelized onions.
Directions for: the YellowBelly Burger
Ingredients
Steak Spice4 Tbsp paprika
2 Tbsp granulated garlic
2 Tbsp dill seed
2 Tbsp coriander
2 Tbsp red pepper flakes
2 Tbsp granulated onion
4 Tbsp black pepper
2 Tbsp sea salt
Beef Short Ribs2 lb(s) beef short ribs
cup vegetable oil
2 - 3 white onions, finely chopped (2 cups)
2 stalks celery, finely chopped
1 large carrot, finely chopped
12 cloves fresh garlic, chopped (1/4 cup)
2 stems thyme
2 stems rosemary
3 bay leaves
cup fire-roasted canned tomatoes (or regular canned tomatoes)
cup apricot glaze (or apricot jam)
4 cups beef stock
1 cup stout beer
Tomato Jam4 - 5 large tomatoes (2 lbs), roughly chopped
2 cups apricot glaze (or apricot jam)
1 Tbsp ginger, finely chopped
1 cup apple cider vinegar
2 lemons, seeded and thinly sliced
3 cups cherry tomatoes
2 bay leaves
1 Tbsp cumin
1 Tbsp coriander
Tbsp crushed red chiles
Tbsp cinnamon
cup brown sugar
1 Tbsp each salt and pepper
YellowBelly Burger2 lb(s) fresh ground beef
cup dried parsley
Garlic Aioli4 cloves fresh garlic, chopped (1/2 cup)
2 Tbsp roasted garlic
2 cups mayonnaise
Salt and pepper
Caramelized Onions2 Tbsp olive oil
3 large onions, sliced
2 Tbsp brown sugar
1 Tbsp balsamic vinegar
Salt and pepper
Assembly6 soft white burger buns
6 oz blue cheese

Directions
Steak Spice1. Using a mortar and pestle, grind together paprika, granulated garlic, dill seed, coriander, red pepper flakes, granulated onion, black pepper, and sea salt.
2. Set aside for later use in the Short Ribs and YellowBurger.
Beef Short Ribs1. Preheat oven to 325F.
2. Toss short ribs in cup of the reserved Steak Spice, to coat.
3. Heat a shallow braising dish over high heat; add vegetable oil and sear short ribs until golden brown on all sides, about 2 minute per side.
4. Add the onions, celery, carrots, garlic, thyme, rosemary, and bay leaves to the pan; stir and cook for about 10 minutes, until vegetables are brown on all sides.
5. Remove braising dish from heat and add the canned tomatoes, apricot glaze, beef stock, and stout beer; stir well.
6. Cover braising dish with a layer of parchment paper and tin foil; place braising dish into the oven and braise for 7 hours.
7. while short ribs braise, make the tomato jam.
Tomato Jam1. in a large pot, combine all ingredients.
2. Bring to a simmer over medium low heat and cook for 2 hours, stirring occasionally.
3. Remove bay leaves and transfer jam to a food processor or blender; blend until smooth.
4. Set jam aside to cool until assembly.
YellowBelly Burger1. in a large bowl, combine ground beef, parsley, and cup of the reserved Steak Spice.
2. Mix well.
3. Divide mixture into six burgers, form into patties, and chill until assembly.
Garlic Aioli1. Combine fresh garlic and roasted garlic in a blender; blend until smooth.
2. Stir garlic puree into the mayonnaise; season with salt and pepper, to taste.
3. Set aside until assembly.
Caramelized Onions1. in a large pan, heat oil over low heat.
2. Add onions and a pinch of salt into the pan and cook over low heat for 15 to 20 minutes, stirring occasionally.
3. once onions are soft and golden, add sugar and balsamic vinegar to caramelize the onions.
4. Continue cooking over low heat for 5 to 10 minutes, stirring occasionally, until onions are sticky and caramelized; set onions aside until burger assembly.
Assembly1. Preheat grill.
2. Using a fork, pull braised Short Ribs off the bone and into strips.
3. Slice and butter the buns.
4. Cook chilled burgers on the grill until juices run clear, about 3 to 4 minutes per side; when burgers are almost done, place buttered buns on the grill to toast.
5. Season burgers with salt and pepper.
6. to assemble the burgers, spread garlic aioli on the bottom of the buns; place cooked burgers onto the bottom buns and top with pulled Short Ribs, reserved Caramelized onions, and one ounce of crumbled blue cheese.
7. Spread reserved Tomato Jam on the top of the bun and place on the burger.
8. Serve with French fries, sweet potato fries, or salad.
Tips and Substitutions
Special Equipment: Mortar and pestle, blender or food processor, grill
Note: Short Ribs take seven hours to braise and Tomato Jam must simmer for 2 hours.
Note: Leftover Tomato Jam can be stored in the fridge for up to 2 weeks
