Directions for: Roasted Eggplant
Ingredients
1 eggplant, cut into 1 inch circles
3 Tbsp vegetable oil
salt аոԁ pepper
Directions
1. Preheat oven tо 400F аոԁ line a baking tray wіtհ parchment paper.
2. Place eggplant pieces on baking tray аոԁ pierce wіtհ a fork.
3. Drizzle oil over eggplant, season wіtհ salt аոԁ pepper.
4. Roast in oven until eggplant is slightly caramelized аոԁ tender, approximately 20 minutes.
