Lettuce wraps are a light weeknight meal that double as a delicious lunch. Brought to you by Uncle Ben's.
Directions for: Asian Beef and 7 Grains Lettuce Wraps
Ingredients
1 Tbsp (15 mL) oil
1 lb(s) (500 g) lean ground beef
1 onion, chopped
2 clove garlic, minced
1 tsp (5 mL) ginger, minced
2 cup (500 mL) cooked UNCLE BEN'S 7 Grains Medley (prepared without butter and salt)
cup (150 mL) honey garlic sauce
12 large lettuce leaves, such as Boston, leafy or iceberg
1 red pepper, very thinly sliced
1 carrot, peeled and cut into matchsticks
1 cup (250 mL) bean sprouts
cup (60 mL) peanuts, crushed
cup (60 mL) green onion, thinly sliced
Directions
1. Heat the oil in a large, nonstick skillet set over medium heat. Add the ground beef, onion, garlic and ginger. Cook for 5 minutes or until browned.
2. Add the honey garlic sauce; simmer for 5 minutes or until reduced. Stir in the UNCLE BENS 7 Grains Medley; cook for 2 minutes or until heated through.
3. Spoon the skillet mixture into the lettuce leaves. Garnish with red pepper, carrot, bean sprouts, peanuts and green onion.
4. Tip: Serve with lime wedges and hot sauce to give these wraps some kick!
