The Ultimate Beef Burger
This beef burger is covered in a special sauce, topped with caramelized onions and served warm on a brioche bun with beefsteak tomatoes, American cheese slices and romaine lettuce.

Ingredients

Special Sauce

cup (125 mL) mayonnaise

1 tsp (5 mL) yellow mustard

Ketchup, to cover

1 Tbsp (15 mL) parsley, finely chopped

1 dill pickle, finely diced

1 tsp (5 mL) lemon juice

Caramelized Onions

1 Tbsp (15 mL) unsalted butter

1 Tbsp (15 mL) grapeseed oil

2 Spanish onion, thinly sliced

Salt and pepper, to taste

Burger Patties

2 lb(s) (900 g) lean ground beef

Salt and pepper, to taste

6 brioche buns

2 Tbsp (30 mL) unsalted butter, divided

1 cup (250 mL) romaine lettuce, shredded

8 slices beefsteak tomato

8 slices American cheese, slices

Special Sauce

1. in a small bowl, mix all of the ingredients. Set aside in the refrigerator until needed.

Caramelized Onions

1. Melt butter and add oil to a large skillet over medium heat.

2. Add onions and toss to coat with butter and oil. Cover and slowly cook onions, stirring occasionally, for 15-20 minutes or until onions turn golden.

3. Turn heat to medium high and begin to brown the onions, stirring constantly about 10 more minutes. Season with salt and pepper.

Burger Patties

1. Use a kitchen scale to divide the ground beef into eight -lb (113 g) pieces. between sheets of wax paper, shape the meat into thin patties just larger than the buns. Season both sides with salt and pepper.

2. Slice 4 of the buns in the middle, and set aside. Slice the remaining 2 buns twice, creating 2 bases and a small top from each bun. (Keep the 2 small tops for later use, such as croutons or breadcrumbs.)

3. Melt 1 tablespoon (15 mL) of butter in a frying pan on medium high heat and, working in batches, toast the buns in the pan until golden brown and set aside.

4. in a large frying pan on medium-high heat, melt 1 tablespoon (15 mL) of butter. Working in batches, fry the patties 2 minutes per side.

5. Spread 1 tablespoon (15 mL) of Special Sauce on the bottom bun, then top within order1 tablespoon (15 mL) of Caramelized Onion, 2 tablespoons (30 mL) of lettuce, 1 slice of tomato, slice of cheese and 1 patty. Top with one of the centre buns, and repeat the condiment, cheese and burger stack, and add the top bun.

6. Repeat with the remaining patties, buns and toppings.
