Directions for: Chili Cheese Oven-Baked Fries
Ingredients
4 lb(s) (2 kg) baking potatoes (about 8), scrubbed
2 Tbsp (30 mL) vegetable oil
1 tsp (5 mL) salt
1 lb(s) (500 g) lean ground beef
1 onion, diced
2 clove garlic, minced
1 Tbsp (15 mL) chili powder
1 tsp (5 mL) each dried oregano and ground coriander
1 can (28 oz/796 mL) crushed tomatoes
1 can (19 oz/540 mL) red kidney beans, drained and rinsed
tsp (1 mL) hot pepper sauce, optional
1 cup (375 mL) Black Diamond Nachos and Tacos Shredded Cheese
cup (125 mL) sour cream (approx.)
2 green onions, thinly sliced
Directions
1. Cut potatoes into -inch (1 cm) thick sticks. in a large bowl, toss potatoes with oil and half of the salt. Spread onto 2 parchment paper-lined baking sheets. Bake in preheated 425F (220C) oven, turning once, until crisp and golden, 40 to 50 minutes.
2. Meanwhile, in saucepan over medium-high heat, fry beef, breaking up with a spoon, until no longer pink, about 5 minutes. Add onion, garlic, chili powder, oregano, coriander and remaining salt; fry, stirring occasionally, until onion is softened, about 3 minutes.
3. Stir in tomatoes, beans and hot sauce, if using; bring to a boil. Reduce heat and simmer, stirring often, until very thick, about 20 minutes.

Divide fries among dishes; spoon chili overtop. Sprinkle with cheese; top with sour cream and green onions.
