Grilled Steak with Black Bean Shrimp
A nourishing steak dish topped with shrimp and tasty black bean sauce from Roger Mooking.

Ingredients

Black Bean Sauce

1 tsp vegetable oil

1 shallot, minced

2 clove garlic, minced

1 Tbsp ginger, minced

1/4 cup plus 1 tbsp fermented black beans, roughly chopped

1 red finger chili, minced

cup soy sauce

1 cup water

cup seasoned rice wine vinegar

1 Tbsp sugar

1 tsp cornstarch mixed with 1 tbsp water

2 cilantro stems, finely chopped

Black Bean Shrimp

1 Tbsp vegetable oil

1 shallot, minced

12 21/25 shrimp, shells removed, devained and roughly chopped

2 piece of green onion, sliced

cup cilantro leaves, roughly chopped

Grilled Steak

1 Tbsp vegetable oil

4 piece 6-8 oz pieces of beef tenderloin (trussed, optional)

Directions

Black Bean Sauce

1. Heat oil in a large saut pan over medium to high heat.

2. Add shallots, garlic and ginger, saut until golden and tender.

3. Add fermented black beans and chili, stir to incorporate.

4. Add soy sauce, water, seasoned rice wine vinegar and sugar, stir.

5. Add cornstarch and water mixture to pan, stir and allow to thicken for 1 minute, then remove from heat.

6. Add cilantro stems, stir and set aside.

Black Bean Shrimp

1. Heat oil in a small saut pan.

2. once oil is hot, add shallots, saut until tender.

3. Add shrimp, and stir.

4. once shrimp is cooked, add Black Bean Sauce. Stir, remove from heat, add green onion and cilantro leaves, set aside until assembly.

Grilled Steak

1. Preheat and lightly oil grill.

2. Season steaks with pepper, place on grill, turning over half way through cooking.

3. Cook until desired doneness, remove from grill and allow to rest for 10 minutes before serving.
