Directions for: Mac 'n' Cheese Meatloaf Hoagie
Ingredients
Meatloaf Glaze1 cup ketchup
cup yellow mustard
cup brown sugar
cup honey
Meatloaf2 Tbsp Worcestershire sauce
5 lb(s) ground beef
1-2 medium onions, chopped (1 1/2 cups)
6 clove garlic, finely chopped (2 tablespoons)
2 cup panko breadcrumbs
5 whole eggs
1 Tbsp salt
2 tsp black pepper
Mac 'n' Cheese16 oz elbow pasta
4 cup sour cream
1 cup pub mix cheese, grated
1 cup Parmesan cheese, grated
1 Tbsp salt
1 Tbsp pepper
Assembly4-6 hoagie buns
mixed cheese, grated, to taste
Directions
Meatloaf Glaze1. in a medium saucepan over medium heat, combine ketchup, yellow mustard, brown sugar, and honey. Bring to a simmer over medium-low heat, stirring constantly until sugar melts.
Meatloaf1. Preheat oven to 375F.
2. in a large bowl, stir together Worcestershire sauce, ground beef, onions, garlic, panko breadcrumbs, eggs, salt, black pepper, and cup of the glaze.
3. Pour meatloaf mixture into a 3-inch deep baking dish. Pour remaining glaze over top and bake for 1 hour, or until meatloaf reaches an internal temperature of 160F.
Mac 'n' Cheese1. Bring a medium pot of water to boil; add elbow macaroni, lower heat to medium-high and boil uncovered for 6-8 minutes, or until noodles are soft.
2. to make the sauce, mix together sour cream, mixed cheese, Parmesan, salt, and pepper.
3. Pour mixture into a medium saucepan and heat over low-medium heat cheese is fully melted; stir often to prevent cheese sauce from burning.
4. Keep warm over low heat until sandwich assembly.
Assembly1. Preheat oven to broil and heat a medium pan over medium heat.
2. Slice meatloaf into 4 (1 x 4-inch) slices; brown meatloaf in the pan for 1-2 minutes per side.
3. Toast hoagie buns in the oven for 1 minute, or until browned.
4. Place one slice of meatloaf into each hoagie bun; spoon cup of mac n cheese into each sandwich.
5. Sprinkle additional cheese over top, to serve.
6. Note: Mac and cheese will keep for up to 2 days in the fridge if covered; meatloaf will keep 3-4 days refrigerated if covered.
