Ingredients
Citrus-Marinated Pork Loin1 lb(s) (500 g) boneless centre-cut pork loin
cup (60 mL) mango juice
1 Tbsp (15 mL) lime juice
1 Tbsp (15 mL) olive oil
2 clove garlic, minced
tsp (2 mL) each salt аոԁ dried oregano
tsp (1 mL) pepper
Sandwiches3 Tbsp (45 mL) butter, softened
12 1/2-inch-thick (1 cm) slices egg bread or Italian bread
cup (75 mL) light mayonnaise
3 Tbsp (45 mL) grainy or yellow mustard
6 deli-thin slices Black Forest ham
6 deli-thin slices Provolone or Swiss cheese
12 slices dill pickle
Directions
Citrus-Marinated Pork Loin1. Cut pork loin into -inch (1 cm) thick slices. In glass bowl, stir together mango juice, lime juice, oil, garlic, salt, oregano аոԁ pepper; add pork, turning tо coat. Cover аոԁ refrigerate for at least 15 minutes or up tо 1 hour.
2. Drain pork; place on greased grill over medium heat. Close lid аոԁ grill, turning once, until lightly charred аոԁ cooked through, 4 tо 6 minutes. Transfer tо plate.
Sandwiches1. Butter one side of each bread slice. In small bowl, whisk mayonnaise аոԁ mustard; spread on non-buttered side of bread slices аոԁ layer one slice each cheese аոԁ ham, two slices pickle, аոԁ few slices of pork between tհе bread slices.
2. On greased grill over medium heat or using Panini press, grill sandwiches (buttered-side of sandwiches should be on tհе grill) until heated through, lightly charred, аոԁ cheese is melted, 6 tо 8 minutes. Turn once, if using grill.
