Sloppy Gino
These are no ordinary sloppy joes, with san marzano tomatoes and pancetta, this north american sandwich gets hit with Italian flare.

Ingredients

2 Tbsp extra virgin olive oil

2 clove garlic, minced

cup pancetta, diced

1 carrot, diced

1 celery rib, diced

1 red bell pepper, diced

1 jalapeno pepper, minced

1 onion, diced

1 lb(s) lean ground chuck

cup ketchup

2 cup San Marzano tomatoes, pureed

2 Tbsp brown sugar

1 Tbsp Worcestershire sauce

1 Tbsp red wine vinegar

1 Tbsp smoked paprika

1 tsp cayenne pepper

1 tsp fresh thyme

Sea salt

Coarsely cracked pepper

4 sesame buns

4 slices American cheese

1 fresh chives, minced

Directions

1. Making the bolognaise: in a pot, heat olive oil on medium. Add garlic and fry until golden, about 1 minute. Add pancetta, carrot, celery, bell pepper, jalapeno, and onion. Saut for 3-5 minutes. Add ground chuck and cook for 10 minutes, until meat is browned. Throw in ketchup, San Marzano tomato puree, brown sugar, Worcestershire sauce, red wine vinegar, paprika, cayenne pepper, thyme, sea salt, and pepper. Stir and let simmer for 15 minutes.

2. Preheat oven to 350F

3. Making the buns: Cut buns on half and scoop out a "bowl" in the bottoms half. on the top half place a slice of American cheese. Place buns on a baking tray and toast in oven until golden.

4. Ladle bolognaise into a bun bowl, sprinkle with chives and top with the cheesy half of the bun.
