Curry Beef with Rice and Broccoli

Directions for: Curry Beef with Rice and Broccoli

Ingredients

1 cup basmati rice

3 cup water

1 tsp butter

1 red onion cut into slivers

2 lb(s) (900 g) flank or lean sirloin steak

2 Tbsp Madras curry paste

1 can (10 oz) tomato soup

tsp Garam masala

tsp paprika

500 mL plain yogurt (2 cups)

5 cup frozen broccoli florets (450g)

Directions

1. Combine rice and water in a large microwave-safe pot or casserole dish.

2. Cover and microwave at high for 10 minutes, then medium for 10 minutes.

3. Heat butter in a large nonstick frying pan or wok at medium high.

4. Add onion as you cut.

5. Cut beef into thin strips, against the grain and add to pan as you cut.

6. Toss occasionally until meat is no longer pink.

7. Add curry paste to meat and stir.

8. Stir in tomato soup. Add spice, fold in plain yogurt.

9. Let simmer for a few minutes.

10. Rinse broccoli and spin dry.

11. Place in microwave-safe pot with lid. Cover and microwave at high for 5 minutes.

12. Serve curry over rice with broccoli.
