El Toro Burger

Directions for: El Toro Burger

Ingredients

Burger

1 lb(s) 80/20 ground beef (or you could grind your own, like we do!)

3 hamburger buns (or you could grind your own, like we do!)

3 oz Manchego cheese, sliced

6 oz Spanish chorizo picante (cured), sliced thinly

3 oz garlic aioli

1 package arugula

6 oz Pickled Red Onion (see recipe below)

salt and pepper

Pickled Red Onions

3 red onions, peeled and sliced thin

1 cup red wine vinegar

1 cup water

1 cup sugar

4 Tbsp salt

Directions

Burger

1. Preheat your grill. Divide the meat to make 3 burgers, about 5 1/4 oz each. Season both sides with salt and pepper. Place on the grill.

2. Butter the burger buns and place on grill to toast.

3. Turn the burger 45 degrees to get the beautiful cross marks on the burger and leave for about 2 minutes.

4. Flip the burger over and shingle the chorizo over the top, place the Manchego cheese on top of that and cover.

5. while the cheese is melting and the burger is finishing cooking, place the garlic aioli on the bun. Put some arugula on the top bun.

6. when the burger is finished and the cheese is melted, place the burger on the bottom bun. Add a little Pickled Red Onion, place the top bun on and devour!

Pickled Red Onions

1. Place the vinegar, water, sugar and salt in a pot a bring to a boil. Pour over the red onions and cool at room temperature. Place in fridge and keep in the liquid until ready to use. these are better when they get to marinate for a few days.
