Directions for: Mr. Bahn Mi-Yagi
Ingredients
Mr. Bahn Mi-Yagi2 brioche hot dog buns
2 natural all-beef hot dogs
2 Tbsp Sriracha Aioli (see recipe below)
cup Lemongrass Pickled Daikon and Carrot (see recipe below)
6 slices cucumber
1 fresh jalapeno, sliced
1 Tbsp cilantro, chopped
Sriracha Aioli (Makes 2 cups)cup Sriracha
2 eggs
juice from 1 medium lemon
1 clove garlic, minced
tsp each salt and pepper
1 cup extra virgin olive oil
Lemongrass Pickled Daikon and Carrot (Makes 4 cups)lb(s) carrots
lb(s) daikon radish
4 stalks fresh lemongrass
3 cloves garlic
zest from 1 medium lemon
2 cups rice wine vinegar
1 cup white wine vinegar
cup white sugar
1 cup water
Directions
Mr. Bahn Mi-Yagi1. Slice brioche and toast with melted butter until golden brown.
2. Steam hot dog and place on bun. Add sliced cucumber and sliced jalapeno. Top with Sriracha Aioli. Top with Lemongrass Pickled Daikon and Carrot. Top with chopped cilantro. Eat!
Sriracha Aioli (Makes 2 cups)1. in a blender add Sriracha, eggs, lemon juice, garlic, salt and pepper. Pure until smooth. with blender on med-high slowly incorporate olive oil in a small stream until emulsified. the oil amount may vary.
Lemongrass Pickled Daikon and Carrot (Makes 4 cups)1. Wash, peel, and shred carrot and daikon and place in a medium saucepot.
2. Peel off exterior of lemon grass, cut off stalk ends and smash with a meat tenderizer to release fragrances. Submerge ends into carrot and daikon.
3. Add garlic, zest, rice wine vinegar, white wine vinegar, sugar and water to sauce pot. Turn heat on medium-low and let simmer for 30 minutes.
4. Remove garlic and lemongrass and cool carrots and daikon reserving some pickling liquid.
