David Rocco's Roast Beef

Ingredients

1 kg topside beef

1 whole head of garlic, separated and peeled

1 bunch rosemary

4 Tbsp cup extra-virgin olive oil

4 Tbsp Tuscan herb mixture (1 part fresh rosemary, 1 part salt, 1 part sage leaves, coarsely chopped)

2 cups white wine

Directions

1. Using a knife, puncture beef with holes all over. Crush cloves of garlic and jam into holes then continue to stuff holes with rosemary and salt.

2. Place roast in pan and coat with 4 tbsp extra-virgin olive oil, then sprinkle with chopped rosemary, sage and salt.

3. in a large oven-safe pot, heat your remaining olive oil and add garlic cloves with skin still on and fresh sprigs of rosemary to flavor the oil. Add the roast and sear on all sides. once meat is fully seared, add white wine to deglaze the pot. Using a spoon, continually coat meat in juices from the bottom of the pot. once liquid has reduced by a third, place pot in a 400F oven to finish, about 30 minutes for medium rare.

4. Remove from oven. Let rest for 10 minutes. Carve and serve.
