Homemade Beef Broth

Directions for: Homemade Beef Broth

Ingredients

700 g stewing beef with fat

700 g sirloin steak

1 Tbsp fresh basil (15 mL)

1 tsp rosemary (5 mL)

tsp white pepper (1 mL)

tsp curry powder (2.5 mL)

Pinch of chili flakes

1 Tbsp parsley (15 mL)

tsp celery salt (2.5 mL)

1 tsp sage (2.5 mL)

2 bay leaves

1 carrot

3 stalks fresh celery

fresh green pepper

1 zucchini

6 mushrooms

cup white wine (60 mL)

12 cup water (3 quarts)

Directions

1. Toss stewing beef and sirloin steak into pot or slow cooker.

2. Add spices.

3. Add carrot, celery, green pepper, zucchini and mushrooms.

4. Add wine.

5. Add water.

6. Mix.

7. Broth can be made by bringing to boil on stove then reducing to a simmer for 2 hours or in a slow cooker for 8 hours on low.

8. Cool broth and strain.

9. Refrigerate for 2 hours.

10. Skim off fat and remove pieces of fat from meat and cut into large chunks.

11. Freeze in a zipper type freezer bag and freeze flat.

12. Freeze broth in 10 oz (1 1/4 cup) containers.
