Bacon Onion Jam

Bacon Onion Jam
A delicious jam to complement your main of beef, pork, ham or turkey.
Directions for: Bacon Onion Jam

Ingredients

2 Tbsp (30 mL) extra virgin olive oil

1 Spanish onion, halved and sliced

1 cup (250 mL) applewood smoked bacon, diced

1 tsp (5 mL) thyme leaves

1 Tbsp (15 mL) balsamic vinegar, reduced to syrup-like consistency)

1 tsp (5 mL) each flat leaf parsley, chives and chervil, finely chopped

kosher salt and freshly ground pepper

Directions

1. in a large skillet set over medium heat, add oil and bacon. Cook until crisp and golden, about 10 minutes. Remove bacon from pan and reserve.

2. Add onions to pan and saut until golden, about 15 minutes, stirring frequently.

3. Return bacon to pan, add the thyme and continue cooking for about 10 minutes more, stirring occasionally.

4. Stir in reduced balsamic vinegar, parsley, chives and chervil and season to taste with salt and pepper. Keep warm until ready to serve.
