Southwest Meatloaf

Directions for: Southwest Meatloaf

Ingredients

Southwest Meatloaf

1 cup (300 ml) All-Bran Original cereal

1 cup (250 ml) beef broth

2 eggs

1 Tbsp (15 ml) chili powder

tsp (1 ml) salt

tsp (1 ml) ground black pepper

1 lb(s) (750 g) lean ground beef

1 finely chopped medium onion (about 1 cup/250 mL)

cup (75 ml) flour

cup (50 ml) each, finely chopped celery, red pepper and fresh parsley

1 cup (250 ml) chunky salsa

2 Tbsp (25 ml) brown sugar

Southwest Meatloaf

1. in large bowl, combine cereal and beef broth. Let stand 2 minutes or until broth is absorbed and cereal softens.

2. in small bowl, combine, eggs, chili powder, salt and black pepper.

3. Add egg mixture, beef, onion, flour, celery, red pepper and parsley to cereal mixture. Mix together well.

4. Press mixture well into 9x 5x 2 (23 x 13 x 6 cm) loaf pan, lined with parchment and sprayed with cooking spray. Bake in 350F (180C) oven until food thermometer reads 160F (71C) at centre of meatloaf about 1 hour 15 minutes. Let stand 10 minutes before slicing. Turn onto serving platter and serve with Sweet Salsa Sauce.

Sweet Salsa Sauce

1. Sweet Salsa Sauce: in small saucepan, heat salsa and brown sugar to a boil. Simmer for 3 minutes, stirring occasionally.
