Directions for: the Slopper
Ingredients
Burgers2 lb(s) 80/20 ground beef
2 tsp cayenne pepper
salt and pepper, to taste
burger buns (brioche works well)
Green Chile12 large roasted green chiles, skin removed (hatch chiles; if you can't find hatch, poblanos will do)
2 serrano chiles, diced
4 cloves garlic, crushed
2 tsp cumin
1 tsp cayenne
tsp white pepper
1 tsp each salt and pepper
1 medium onion, diced
2 lb(s) pork shoulder, cut into cubes
2 tsp fresh cilantro, diced
1 cup water
24 oz chicken broth
cup flour
1 12-oz can Ro*Tel tomatoes
Directions
Burgers1. Mix ingredients and make burger patties to your desired weight. Grill the burgers till done.
Green Chile1. Brown pork shoulder in a large pot. Add garlic and onion to the pot. Add flour and continue to stir (make sure not to burn the flour).
2. Add water and stir. Add chicken broth. Add the rest of the ingredients. if you like a thicker chil,e add flour; if you like it thinner, add water.
3. Shred some Cheddar cheese and Monterey Jack. once the burgers are cooked put them in the buns, top with a handful of cheese and put the top of the bun on. Smother with generous amounts of green chile. Enjoy!
