Mighty Melt

Directions for: Mighty Melt

Ingredients

1 brioche "Cheesy Buns" bun (see directions)

lb(s) Angus ground chuck beef (3.55 oz)

3 oz sharp Cheddar cheese, shredded

1 oz cooked smoked bacon

1 medium white onion, cut into strips

1 oz Burger Monster's Chipotle Barbeque Sauce

1 oz your favourite coleslaw

salt and black pepper

tempura flour

soda water

Directions

1. Pre-heat the flat top griddle for 30 minutes. if you cannot hold your hand over the grill more than 3 seconds its ready. Pre-heat the fryer to 350F (177C), about 20 minutes.

2. Using only the freshest 80/20 Angus chuck ground beef, form a patty with your hands about 5 inches in diameter and 1/4-inch thick. Set aside in fridge.

3. Mix tempura batter (follow package instructions).

4. Slice onion into strips. Using the longest pair of tongs you have, dip about 5 strips of white onion into tempura batter; let excess batter run off before slowly submerging onions under the hot oil. Fry until golden brown and drain on paper towel, season with salt.

5. how to make "Cheesy Buns": on griddle, place 2 oz cheese into 2 small piles directly on surface of hot griddle. Place top and bottom Brioche buns cut side down on the cheese, let set for 1 minute. Using a flat metal spatula, wedge it under the melted cheese to release the buns from the griddle. Set aside.

6. Find the hottest spot on the griddle and place the burger patty down, then season with salt and pepper, for medium rare turn patty after 3 minutes.

7. Stack burger with remaining cheese, cooked bacon, tempura onion and top Cheesy Bun; continue cooking for another 3 minutes.

8. on bottom cheesy bun, drizzle Burger Monsters Homemade Chipotle Barbecue Sauce and add your favourite coleslaw.

9. Using spatula, take the stacked burger carefully from griddle to its even better bottom Cheesy Bun to complete your very own Burger Monster Mighty Melt. Tear into it!
