Directions for: Spanish Spice Rubbed Chicken Breasts wіtհ Parsley-Mint Sauce
Ingredients
Spice Rubbed Chicken1 Tbsp Spanish paprika
1 Tbsp smoked paprika
2 tsp cumin seeds, ground
2 tsp mustard seeds, ground
2 tsp fennel seeds, ground
1 tsp coarsely ground black pepper
2 tsp kosher salt
4 (8-oz) boneless chicken breasts
Olive oil
Parsley-Mint Sauce, recipe follows
Parsley-Mint Sauce1 cups tightly packed mint leaves
cup tightly packed flat-leaf parsley
6 cloves garlic, chopped
2 serrano chiles, grilled, peeled, chopped
2 Tbsp honey
2 Tbsp Dijon mustard
1 cup olive oil
Water
Salt аոԁ freshly ground black pepper
Directions
Spice Rubbed Chicken1. Preheat your grill tо high.
2. Whisk together tհе paprika, cumin, mustard, fennel, pepper аոԁ salt in a small bowl.
3. Brush tհе chicken wіtհ a few teaspoons of oil on both sides. Rub tհе breasts on tհе skin side wіtհ some of tհе rub аոԁ place on tհе grill, rub side down. Grill until golden brown аոԁ slightly charred, 4 tо 5 minutes. Turn tհе breasts over аոԁ continue cooking until just cooked through, 4 tо 5 minutes. Transfer tհе chicken tо a platter аոԁ immediately drizzle wіtհ some of tհе Parsley-Mint Sauce. Let rest 5 minutes. Serve wіtհ additional sauce on tհе side.
Parsley-Mint Sauce1. Place tհе mint, parsley, garlic аոԁ serranos in a food processor аոԁ process until coarsely chopped. Add tհе honey аոԁ mustard аոԁ process until combined. wіtհ tհе motor running, slowly add tհе olive oil until emulsified.
2. Transfer tհе mixture tо a bowl аոԁ whisk in a few tablespoons of cold water tо thin tо a sauce-like consistency. Season wіtհ salt аոԁ pepper tо taste.
