Brisket Sundae
This intriguing dish is a combination of salty, savoury and sweet, pairing beef brisket and bacon with a homemade ice cream, all drizzled with BBQ sauce.

Ingredients

4 cups premade brisket, diced

cup maple syrup

8 strips bacon

8 cups half and half cream

1 cups sugar

4 tsp vanilla extract

cup BBQ sauce, store bought

Directions

1. Preheat oven to 375F (190C).

2. in a frying pan add brisket and maple syrup over low heat. Allow maple syrup to thicken for 5-10 minutes. Remove from heat and place to the side.

3. Place bacon on baking tray and cook 15 minutes. Remove onto paper towel and crumble. Drain the bacon fat into a measuring cup.

4. Combine half and half, heavy cream, sugar, and vanilla extract into an ice cream machine. Follow individual directions for your machine to make the ice cream. 10 minutes before the ice cream has thickened, pour in the bacon fat, half of the brisket, and the bacon crumble. at a lower speed, drizzle in three quarters of the BBQ sauce. Place ice cream into freezer.

5. when ready to serve, remove ice cream from freezer. Scoop two scoops into each bowl. Top with remaining brisket and a drizzle of BBQ sauce.
