Directions for: Short Rib Egg Sandwiches
Ingredients
Bouquet Garnischeesecloth and tie
1 sprig rosemary
1 sprig thyme
1 sprig parsley
1 piece whole star anise
1 tsp peppercorns
1 tsp juniper berries
Braised Beef4 lb(s) beef chuck
kosher salt
cracked black pepper
grapeseed oil, for browning
flour, for dredging
2 cups mirepoix (equal parts cubed carrot, onion, celery and leeks)
4 cups beef stock
1 cup red wine
Onion Ringsonions
1 cup cornstarch
1 cup flour
1 can beer
small pinch cayenne pepper
oil, for frying
salt, to season
Soft-Poached Eggs8 - 10 eggs
1 Tbsp vinegar

8 - 10 brioche buns
butter
grainy mustard
arugula
Stilton (or blue cheese)
Directions
Bouquet Garnis1. Tie these together in the cheesecloth for adding to the braised beef later.
Braised Beef1. Season all sides of the beef heavily with salt and pepper. Toss in flour and then brown in a cast-iron (or heavy) pan in -inch of grapeseed oil, then set the beef aside.
2. in the same pan, caramelize the mirepoix and then deglaze with the beef stock.
3. Bring the mixture to a simmer and submerge the short rib. Drop the Bouquet Garnis in and cover the whole pan in foil. Put in a preheated 275F oven for 2 to 3 hours, or until you can squeeze the meat with a pair of tongs and it begins to break apart.
4. Remove from the oven and cool to room temperature. once cool, remove the beef from the liquid and strain the liquid into a pot. Bring to a simmer and reduce by three quarters.
5. in a separate pot, reduce the wine by three quarters, then add it to the reduced stock and season with salt.
Onion Rings1. Slice the onions into half-inch rings, ideally making enough for two to three per sandwich.
2. Combine the flour, beer and cayenne pepper to make the batter.
3. Dip the onion rings in the batter and put them in a deep fryer or deep frying pan at 350F for 3-4 minutes or until crispy and golden brown. Remove from the fryer and season with salt.
Soft-Poached Eggs1. Bring at least 3 inches of water to a low simmer and add 1 tablespoon of white vinegar. Crack the shell and release the egg close to the water so it makes no splash. Add your other eggs just give them a little bit of space in between each egg.
2. with a scraper or plastic flipper, press it against the bottom of the pan and run it under each egg to be sure that the egg didn't stick before it set.
Short Rib Fried Egg Sandwiches1. Cut the short rib into -inch thick slices. Heat up some of the red wine sauce in a pan. Add in the short rib portions and slowly heat up the liquid and the beef until it is hot.
2. Soft-poach your egg. Toast your bread and butter each side. Put a small amount of mustard on the bread. Put arugula on the bottom, place short rib on top of the arugula, the Stilton on top of that, then the poached egg and then the onion rings. Season with salt and pepper and top with the other piece of bread.
