Directions for: Braised Edamame with Leeks and Miso
Ingredients
1 Tbsp vegetable oil
2 cup leeks, finely chopped (white and green parts only)
1 500 g package frozen shelled edamame (soybeans)
2 tsp fresh ginger, finely grated
1 red bell pepper, diced
1 Tbsp light miso paste
dash sesame oil
1 Tbsp toasted sesame seeds
Directions
1. Heat a large saut pan over medium heat and add the oil. Add the leeks and saut until tender, about 3 minutes. Add the edamame and 1 cup of water and bring to a simmer. Simmer, uncovered, until almost all the liquid has evaporated, about 5 minutes.
2. Reduce the heat to low and stir in the pepper, miso paste and sesame oil (miso is salty added salt should not be needed). Stir in the sesame seeds and serve.
