This is one delicious, aromatic and satisfying meal you won't want to miss.
Directions for: Spaghetti and Meatballs
Ingredients
cup (125 mL) unsalted butter
2 cans whole San Marzano tomatoes
2 yellow onions, peeled and cut in half
cup (125 mL) white bread, cubed
cup (125 mL) whole milk
lb(s) (114g) ground pork
lb(s) (114g) ground veal
lb(s) (114g) medium ground beef
tsp (2.5 mL) kosher salt
tsp (2.5 mL) black pepper
cup (125 mL) Parmesan cheese, grated
tsp (1 mL) ground nutmeg
1 Tbsp (15 mL) parsley, minced
6 (1/2-inch/1.25cm) cubed mozzarella cheese
lb(s) (230g) spaghetti
2 sprigs basil leaves
Directions
1. in a large pot, melt butter over medium heat. Add tomatoes and onion. Gently crush tomatoes with a spoon to break them down into large chunks. Bring to a simmer and continue cooking for 45 minutes.
2. Preheat oven to 375F (190C).
3. Soak bread in milk for 5 minutes. Gently squeeze out any extra milk and combine the bread with pork, veal, beef, salt, pepper, Parmesan, nutmeg and parsley. do not over mix.
4. Roll 6 large meatballs. Using your index finger, create an indentation in the middle of each meatball. Place a cube of mozzarella cheese in the middle of the meatball and form the meat around the cheese.
5. Bake meatballs on a parchment lined sheet for 10-12 minutes.
6. Remove one full onion from the tomato sauce, leaving two remaining halves.
7. very carefully ladle the tomato sauce and onion into a blender. Blend until smooth.
8. Place the blended tomato sauce back into the pot on a low heat. Carefully add the meatballs to the sauce, making sure that they are covered. Simmer for 10-12 minutes with a lid on.
9. Cook your spaghetti in salted boiling water.
10. Drain the pasta reserving cup (125 mL) of pasta water.
11. Remove the meatballs from the sauce and set aside.
12. Toss the pasta, sauce and reserved pasta water together until the spaghetti is evenly coated.
13. Using your tongs, twirl the pasta to form a nest. Plate in two bowls and top each serving with three meatballs and a spring of basil for garnish.
