Tater Tot Shepherd's Pie
Its like your classic shepherds pie, but a lot more fun. in this recipe, we playfully top Shepherds pie filling with crispy tater tots in lieu of the traditional, creamy mashed potatoes. this dish is neither a pot nor a pie, but we think youll love its ease, deliciousness and nostalgia, whatever you call it!
Directions for: Tater Tot Shepherd's Pie

Ingredients

1 tsp vegetable oil

1 small onion, diced

2 lbs lean ground beef

1 tsp salt

3 Tbsp all-purpose flour

2 Tbsp tomato paste

1 cup regular beef stock

1 cups frozen vegetable medley

1 lb(s) tater tots of choice

Directions

1. Preheat oven to 400F.

2. in a large skillet, heat oil over medium. Add onion and cook until translucent and fragrant, about 2 minutes. Increase heat to high and add in beef and salt. Stirring often, cook until no pink remains in the meat, about 5 minutes.

3. Add in flour and tomato paste and stir to combine. Pour in beef stock and cook until mixture is thick and saucy, about 5 minutes. Fold in frozen vegetables.

4. Smooth mixture into a large casserole dish. Arrange tater tots on top of beef mixture until completely covered. Bake until tater tots are golden and crisp, about 35 minutes. Serve.
