Directions for: Star Anise Flank Steak
Ingredients
Star Anise Orange Sauce1 Tbsp vegetable oil
1 shallot, cut in half and sliced
2 star anise, whole
1 Thai chili, slit lengthwise, seeded and kept in one piece
2 cup orange juice (store bought)
zest and juice of 2 oranges
1 Tbsp ginger, smashed
cup sugar
1-1/2 tbsp fish sauce
1 tsp soy sauce
2 whole star anise, ground in mortar and pestle
1 Tbsp butter, cold
salt
Flank Steak1 flank steak, cut into 1/4 inch slices across the grain
cup cornstarch
2 Tbsp garlic powder
tsp cayenne
1 tsp black pepper, ground
2 star anise, ground in mortar and pestle
vegetable oil, for frying

Directions
Star Anise Orange Sauce1. Heat oil in saut pan over medium to high heat.
2. Saut shallots, tossing until golden brown, approximately 1-2 minutes.
3. Add whole star anise and chili.
4. Deglaze with store bought and fresh orange juice.
5. Add ginger and sugar, stir.
6. Reduce sauce over medium to high heat until syrup consistency (sauce should coat the back of a spoon), approximately 5 minutes.
7. Strain into smaller saucepan, return to stove.
8. Add fish sauce, soy sauce, ground star anise and orange zest.
9. over medium to low heat, cook until orange zest is tender, approximately 2 minutes.
10. Remove from heat, add butter, stir to incorporate.
11. Season with salt.
Flank Steak1. in a large, wide-based pot, heat oil to 365F.
2. Prepare a tray lined with paper towel.
3. Place cornstarch, garlic powder, cayenne, salt, black pepper and half of ground star anise in a bowl.
4. Lightly dredge flank steak in cornstarch mixture in batches.
5. Fry flank steak in batches.
6. Remove from oil and place on lined tray.
7. Fry remaining Flank Steak, repeating process.
8. Place Flank Steak in a large bowl, toss with Star Anise Orange Sauce.
9. Season with other half of ground star anise and salt.
