Serve sauce directly over tenderloin on plate accompanied by Plantain croquettes.
Directions for: Tabacon's Beef Tenderloin in Pejebaye Sauce
Ingredients
cup corn oil
1 lean cut of beef tenderloin
1 lb(s) pejebayes
medium dry white wine
sour cream
beef broth
salt to taste
pepper to taste
Directions
1. Boil pejebayes in water with dash of salt, liquify when soft and cooled.
2. Reduce white wine.
3. Reduce cream separately.
4. Mix together blended pejebayes, white wine and cream reduction and encorporate beef broth.
5. Heat for 10 minutes over low flame.
6. Add salt and pepper to taste.
7. Grill or flame broil tenderloin.
