Directions for: Black Bean and Asparagus Stir Fry
Ingredients
3 lb(s) striploin or top sirloin steaks, fat trimmed
cup cornstarch
cup soy sauce
3 Tbsp minced fresh ginger
9 cloves garlic, minced
cup canola oil
1 cup canned black beans, drained
cup chicken broth
tsp red pepper flakes
tsp salt
granulated sugar
4 lb(s) fresh asparagus, cut into 2-inch pieces
2 red or orange bell peppers, sliced
Directions
1. Thinly slice steaks and place in large bowl; toss with cornstarch. Add soy sauce, ginger, garlic, and half of the oil; set aside to marinate.
2. in a food processor, puree beans with broth, red pepper flakes, salt, and sugar; set aside.
3. Heat remaining oil and saut asparagus and red pepper; remove into bowl. Saut beef in batches and add to bowl. Bring bean mixture to boil in wok and return beef and vegetables to wok; stir and heat through to serve.
